MMS - Just because you don't use it does not mean other people don't, a 2003 Sony Ericsson P900 has SMS, MMS and Email capabilities.
Video Recording - Just because all the phone video recorders that you have used are crap doesn't make all of them crap. There are further uses for video recorders than recording rock concerts (which btw is illegal)
Video Chat - To answer your question, yes people have used this and do use it today, just because you don't see it happening everywhere doesn't mean that its not in use.
Memory Card - I think you should say more, there are phones on the market that allow up 16GB hot swappable memory cards which basically means UNLIMITED SPACE
Colour Display - Was probably more clear than any other mobile phone when the iPhone was released, there are phones on the market now that have higher resolutions.
MMS – Truly, who uses MMS all the time! iPhone has email, which means that your friends can get the pictures at a much better quality than crappy MMS
